Sodium nitrate and sodium nitrite cures have been used for hundreds (very possibly thousands) of years in the production of cured meats and sausages. They are responsible for the signature pink coloration of cured meat (think of ham) and contribute to the distinctive flavor of cured products.
Much more important though, is their role in preventing a devastating form of food poisoning called botulism.
Food-borne botulism is caused by a toxin produced from a particularly nasty bacteria called Clostridium botulinum. This bacteria loves a moist, low oxygen environment and prefers temperatures between 40 and 140 degrees F. That's exactly the environment we provide when we smoke sausage and meats in a smoke house or hang dried sausage in a curing shed.
It is appropriate to have concerns over nitrate/nitrite usage in sausage making and meat curing. After all, there is evidence that the use of excess amounts of these compounds can lead to health risks, up to and including, cancer. The rejoinder is that the FDA has determined that there currently is no effective substitute for nitrates and nitrites for preventing the growth of botulism spores.
In the United States, nitrite levels in commercially produced cured foods are currently as low as possible and are strictly regulated. When it comes to using cures in our home sausage kitchens though, We have to rely on our own common sense.
The first decision the home sausage maker needs to make is whether or not to produce cured sausage at all. There are many very good recipes for fresh sausage varieties that don't call for nitrite cures, and If you are overly concerned about possible health risks you may decide to refrain from making cured sausages altogether.
If you make the choice to produce smoked and/or cured products, there are some easy to follow guidelines to minimize any possible risks.
o Use only commercially available cures that are designed for sausage making and meat curing. They have the minimum effective levels of nitrates and nitrites already formulated into them.
o Always follow precisely the instructions provided with the the product. Not all commercially available cures have exactly the same make up, and the amounts needed will vary.
o Never use "saltpeter" as a curing agent. Its use was common practice in the past, but we now know that it is far stronger than is necessary for curing meat.
It's really pretty straight forward. If you want to make cured and smoked sausage that is safe from the risk of botulism food poisoning, you need to use a nitrate/nitrite based curing agent. At this point in history, there is no known effective alternative.

The Chilterns has a vast variety of wildlife and this is recognized through the nature reserves that have been set up protecting areas of national and local importance.
You can also enjoy the stunning displays in the beech woods in spring , a myriad of flowers covering the chalk grasslands in the summer and spectacular red kites gliding over the Chiltern hills in winter and autumn.
There are opportunities for a fascinating day out at a number of museums in the Chiltern area. Everything from historic places to exhibitions around the river Thames.
