In this article we are going to explore All Clad Copper Core cookware. This is the best cookware available today in my humble opinion and like the old George Thorogood song used to say "Bad to the bone!" All Clad is bad to the core! The All Clad copper core cookware line is the invention of over forty years of research and development in the area of "bonding" dissimilar metals and making use of the best properties of each.
This is modern day alchemy at its finest! The alchemy begins with the heat conduction properties of copper which holds heat for a long time and heats evenly and in return cools evenly as well. This and the benefits of the ease of cleaning of pure rolled 18/10 stainless steel and not the lesser quality 18/8 of lesser brands of cookware make copper core unique!
All Clad copper core utilizes a design of 5 ply bonding of metals. An exterior of pure 18/10 rolled stainless steel with a layer of aluminum underneath that and then comes the copper core with its excellent heat conduction and then another layer of aluminum, finally accompanied by a final layer of pure 18/10 stainless. This stainless exterior is very easy to clean and maintains its finish and rarely if ever needs to be polished as with so many lesser quality brands. It is recommended to wash this cookware by hand to maintain the stainless steel luster, but me personally I have not had any issues using my dishwasher with them.
This cookware line comes equipped with stainless steel stay cool handles and copper core is oven safe up to five hundred degrees. The stainless steel exterior is great for searing foods and then deglazing to make sauces and gravies!
As with anything in this world there are always pros and cons. The pros of this cookware line are the fact that they are made of premium grades metals with a patented bonding process that cannot be copied. They are made in the good old USA which means American jobs are being supported and an American economy is being supported as well.Even heating by means of the heat conduction properties of the copper core itself. Ease of care and cleaning and they are built to last a lifetime and come equipped with an excellent manufacturers warranty against defects in craftsmanship.
The cons are the fact that All Clad copper core cookware is a bit on the heavy side, so if a person is not used to heavy cookware they will build some muscle using this line. (this is a pro in disguise as a con!) This line is a bit on the expensive side and requires a commitment to owning the best! The only other con is that copper core is not a nonstick line, so I suggest to get some nonstick All Clad for making things like eggs, omelletes and crepes! For these kinds of tasks nothing can beat nonstick cookware.

I am looking to get new cookware. Are copper sets worth the hassle?
I really like the All Clad Cop-R-Chef set but I wanted to know more about the upkeep and cleaning. Do they have to be cleaned right after being used? Any advice? Or should I just still with the stainless steel set? Thanks!
I have both types, Revere ware copper bottom stainless and Farberware stainless. I honestly can't see that much of a difference in the performance. I also have a gas stove, so the copper bottoms do discolor quickly.
I would have to admit I do not clean the copper bottoms after each use. I don't display them, so as long as I know the bottoms are clean it isn't an issue.
I don't know if there would be a noticeable difference cooking with an electric stove, but I would guess not.
