This is corn chowder with a Mexican twist!
1-1/2 pounds boneless skinless chicken breasts, cut into bite-size pieces
1/2 cup onion, chopped
1 clove garlic, minced
3 tablespoons butter
2 cubes chicken bouillon
1 cup hot water
3/4 teaspoon ground cumin
2 cups half and half cream
2 cups shredded Monterey Jack cheese
1 (14.75 oz.) can cream style corn
1 (4 oz.) can diced green chilies
1 dash hot pepper sauce
1 tomato, chopped
Fresh cilantro sprigs, for garnish (optional)
Directions
In a Dutch oven, brown the chicken, onion and garlic in the butter until the chicken is no longer pink.
Dissolve the bouillon in hot water. Pour into Dutch oven and season with cumin. Bring to a boil. Reduce heat to low. Cover and simmer for 5 minutes.
Stir in the cream, cheese, corn, chilies and hot pepper sauce. Cook until the cheese is melted; stir frequently. Stir in the chopped tomato. Garnish with cilantro.

A very hearty soup that will really hit the spot. To spice things up a bit more, add some chopped jalapeno peppers and a splash of fresh lime juice.
2 pounds beef shank, with bone
1 tablespoon vegetable oil
2 teaspoons salt
2 teaspoons ground black pepper
1 onion, chopped
1 (14.5 oz.) can diced tomatoes
3 cups beef broth
4 cups water
2 medium carrots, coarsely chopped
1/4 cup fresh cilantro, chopped
1 potato, quartered (optional)
2 ears corn, husked and cut into thirds
2 chayotes, quartered (optional)
1 medium head cabbage, cored and cut into wedges
1/4 cup pickled jalapenos, sliced
1/4 cup onion, finely chopped
1 cup fresh cilantro, chopped
2 limes, cut into wedges
4 radishes, quartered
Directions
Cut the meat from the beef bones into about 1/2-inch pieces, leaving some on the bones.
In a heavy soup pot, heat up oil over medium heat. Add in the meat and the bones, season with salt and pepper. Cook and stir until thoroughly browned.
Add 1 onion and cook until the onion is also lightly browned. Stir in the tomatoes and broth. The liquid should cover the bones by 1/2-inch. If not, add enough water to compensate.
Reduce heat to low and simmer for 1 hour with the lid on loosely. If the meat is not tender, continue cooking for another 10 minutes or so.
Pour in the water, and return to a simmer. Add the carrot and 1/4 cup of cilantro. Cook for 10 minutes, then stir in the potato, corn and chayote. Simmer until the vegetables are tender. Push the cabbage wedges into the soup and cook for 10 more minutes.
Ladle soup into large bowls, including meat vegetables and bones. Garnish with jalapenos, minced onion and additional cilantro. Squeeze lime juice over all, and serve with radishes.

This is a very easy and lively soup. You can add a few dashes of hot sauce to spice it up a bit more.
2 tablespoons vegetable oil
1 (1 pound) pkg. frozen pepper and onion stir fry mix
2 cloves garlic, minced
3 tablespoon ground cumin
1 (28 oz.) can crushed tomatoes
3 (4 oz.) cans chopped green chili peppers, drained
4 (14 oz.) cans vegetable broth
Salt and pepper to taste
1 (11 oz.) can whole kernel corn
12 ounces tortilla chips
1 cup shredded Cheddar cheese
1 avocado, peeled, pitted and diced
Directions
In a large pot, heat up the oil over medium heat. Stir in the pepper and onion stir fry mix, garlic and cumin. Cook for 5 minutes, until vegetables are tender. Mix in the tomatoes and chili peppers.
Pour in the broth and season with salt and pepper. Bring to a boil. Reduce heat to low and simmer for 30 minutes.
Mix the corn into the soup and continue cooking for 5 minutes. Serve in bowls over equal amounts of tortilla chips. Top with the cheese and avocado.

1 pkg. Yeast
3 c. Better for Bread white flour
1 Tsp. Salt
1 Tsp. Sugar
1 c. Water (very warm)
1 c. Sourdough starter
Directions
Directions for bread recipe: Put all the ingredients into pan in the order listed. Select either the "white" or "oat/French" bread setting turn the brown control on the side all the way up to the darkest setting and push start. Use "regular" cycle instead of "Turbo." At 2500-foot altitude remove 2 tbs. bread flour and substitute it with 2 tbs. Gluten.
COUNTRY PUMPKIN BREAD
Ingredients
3/4 c. Shortening
2 1/2 c. Sugar
4 Eggs, beaten
2 c. Cooked pumpkin
2/3 c. Water
3 1/2 c. All-purpose flour
1/2 Tsp. Baking powder
2 Tsp. Soda
1 Tsp. Salt
1 Tsp. Cinnamon
1 Tsp. Allspice
1 c. Black walnuts
2/3 c. Raisins
Directions
Preheat oven to 350. Cream shortening, sugar, and eggs. Stir in pumpkin and water. Mix together flour, baking powder, soda, salt, and spices. Stir dry ingredients into wet ingredients. Fold in nuts and raisins. Spoon batter into two greased and floured 9x5 loaf pans and bake for one hour or until bread tests done with a toothpick. Yield: 2 loaves.
BANANA BREAD 4
Ingredients
1 3/4 c. All-purpose flour
1 1/2 Tsp. Baking powder
1/2 Tsp. Baking soda
1/2 Tsp. Salt
1/2 Tsp. Ground ginger
1/4 Tsp. Ground allspice
1/4 Tsp. Grated nutmeg
1 Tsp. Grated lemon peel (optional)
1/4 c. Ground almonds (optional)
1/2 c. Butter or margarine
3/4 c. Sugar
2 Eggs
1 1/2 c. Mashed banana (4 medium bananas)
Directions
1. Preheat oven to 350 F. Grease 9 x 5 inch loaf pan. 2. Sift flour, baking
powder, baking soda, salt, ginger, allspice and nutmeg together in bowl. Add lemon peel and almonds. Stir until combined. Set aside. 3. Beat butter in large mixing bowl until soft and creamy. Beat in sugar until light and fluffy. Add eggs and beat until thoroughly blended. Beat in flour mixture alternately with bananas until mixture is well blended. Pour into prepared pan. 4. Bake in center of oven 1 hour to 1 hour 5 minutes, or until toothpick inserted in center comes out clean. 5. Cool in pan on wire rack 10 minutes. Invert from pan and cool completely on rack. Banana bread recipe variation: Banana-walnut or -pecan bread: Omit almonds. Add 3/4 cup coarsely chopped walnuts or pecans with bananas.

Problems with our wireless mouse--can anyone help?
We've tried and tried, and just cannot trap the thing! LOL No seriously, the wireless mouse that we recently hooked up to our computer thru one of the USB ports will sometimes work and sometimes not. We've only had it for a week but although it was still in its original pkg, we got it from a friend of ours who works in computers and had it just lying around, so I don't know how old the batteries might be that came with it. Could it be a battery issue? When I restart the computer and push the button on the back of the mouse and the one on the receiver, it will work. But there's a 50/50 chance that if I shut the computer down tonight and start it up again in the morning, the darn mouse will not work. What's the problem? By the way, sometimes the same thing happens with the keyboard, which makes me think it's a computer issue, not a battery problem. Any help please?
I should add that the keyboard is not wireless. And to HVS--how do I figure that out?
You push the reciever first then the mouse transmitter to synchronise frequencies. Same with keyboard. Changing the batteries will not do any harm.
