I'm working on a simple proof. Is there a law or postulate or something that states that all right angles are 90 degrees?
It is not a theorem or postulate. It is the DEFINITION of degree. By definition a right angle is given the measure 90 degrees, and 1/90th of a right angle is given the measure 1 degree.
That is a human convention, and it is not the only one used. For example if a right angle is given the measure 100, then the units of measure are called grads.
A more natural measure of angles (and the one used in advanced mathematics) is the radian, which measures the angle as the amount of arc of the unit circle that the angle cuts off. In this system of angle measure a right angle is measured by the number π/2. This corresponds to the fact that 1/4 of the circumference of the unit circle is π/2.
