Federal and state incentives are making solar hot water very attractive for restaurants and bars that are constantly washing and sanitizing dishes, silverware, wine glasses, pots, and pans with steaming hot water.
Aside from saving on your gas or electric utility bill, there's also the added value of showing your customers that you're environmentally conscious. So if you're serving a healthy or organic menu, the curb appeal of solar panels on your roof also shows that you're committed to not only serving healthy food, but also to serving Mother Nature.
Commercial solar hot water (often referred to as "solar thermal") isn't right for every restaurant. Naturally, you have to have enough sun hitting your roof with minimal surrounding shade, but much more goes into a site assessment.
Here's a basic overview of what a solar installer will need to know:
Who owns the building? If not you (or your franchise), you're going to need permission from your landlord to install the solar collector panels on the roof. The landlord may think that's a good deal when he or see sees the numbers. A solar installer will help you with getting all the information your landlord will need.
Your type of dish washer.Every brand of dishwasher has specifications about how much water is used per load. The installer will need this information to give you an accurate cost estimate.
How many loads per week? In addition to the brand, it would help the estimation accuracy if your dishwasher employee could count how many loads are used during weekdays and weekends. They'll also need to see how many bathrooms you have and kitchen sinks.
Your current gas bill. Taking into account the above and your gas fired kitchen stoves, grills, ovens, and heating systems, the solar installer can then get a picture of your total restaurant gas usage. By seeing a year's worth of your gas bill, the company's design and engineering department can then estimate the portion of your gas bill that is used for water heating.
Boiler room location. The site assessment will need to see where your restaurant's gas powered water storage tank is located. The type of tank matters too. The room needs to be large enough to incorporate a solar water heater storage tank and what's called "a heat exchanger." Of course, there also has to be access for pipes to reach the roof where the solar collectors will be installed. If not, the solar hot water tank may have to be placed in another area that's separate from your main tank.
Distance from storage room to the roof. A hot water pump will circulate liquid from the solar panels to the storage tank. In order to know the size of the pump needed, the installer will measure the distance from the storage tank area to the roof's solar collectors. In addition, the measured distance will show the required length of extra piping.
Now that the installer can see what kind of system you need, he can give your restaurant an estimate that can take care of up to 80% of your annual hot water needs. The out of pocket, net cost, payback time, and return on investment are all going to depend on the available local renewable energy incentives as well as future utility rates. Even without local incentives, the Federal government offers a 30% tax credit for thermal or electric systems--as well as other tax advantages.
Solar hot water isn't right for every restaurant, but you really can't know without getting a proper site assessment and quote from an experienced installer.

Use Less Electricity With A Smart Header Tank Rainwater System
Nowadays people are under pressure to reduce their mains water consumption. Simply by using rainwater off our own roofs, we can reduce our use of mains water by 50% which will enable us to reduce our total carbon footprint.
However, most rainwater systems need a pump to get the water to where it is needed. Also, the pump must be powerful and requires electricity. This way does not help the carbon footprint and also the running cost has to be taken into consideration when fitting a rainwater system. Typical "direct feed" rainwater systems have a pressure sensitive pump which maintains pressure on the rainwater pipes to toilets, washing machines and any non-drinking-water tap. Every time an appliance is in use, the pump switches itself on. Furthermore, as pressure in the pipe run drops, the pump will start up again even when there has been no demand on the water supply. The pump, therefore, "hunts", i.e. it automatically turns itself off and on as needed throughout the day and night. So because the pump starting up draws a peak surge in power, electricity use is unnecessarily high. Additionally, this exertion increases the wear on the motor, seals and pump bearings.
Using a gravity feed system in conjunction with a specially-designed header tank solves this issue.
Energy-saving rainwater systems use a smart rainwater header tank. The main storage tank pump feeds rainwater up to the header tank. This way the appliances are fed by gravity. In smart header tanks, such as the Rain Director, the electronic sensor will start the pump only when the tank is completely empty. A 91 litre header tank will last for 12 toilet flushes, and a clothes washing machine cycle, i.e. more or less an average family's daily use. It also takes just under two minutes for the pump to refill the header tank. The pump would only cycle one time per day in your average home.
About ten times less power will be used. Presuming one washing machine use and 12 WC flushes each day, with a direct-supply pump system energy use is @ 1.5 kilowatt-hours (the same as using a 1000 watt electric fire for an hour and a half each day).
